| 内容記述 | [Author abstract]Free amino acids in muscle of Japanese parrot fish, Oplegnathus fasciatus, which were bred with horse mackerel paste, horse mackerel paste and mash for yellowtail, pellet for yellowtail and mussel paste, were determined. The results obtained were as follows.1) It was characteristic of free amino acids composition of muscle of Japanese parrot fish that taurine was most rich followed by lysine, alanine and glycine.2) During experimental breeding for 100 days, contents of threonine, serine, glutamic acid, proline, alanine and histidine seemed to change in extractives of their muscles.3) In muscle extractives of Japanese parrot fish bred with fish meat, mixed starch (F-2, F-3), and with shell-fish meat (F4), contents of threonine, serine, glutamic acid, proline, glycine and alanine were increased. It was suggested that the increase of these amino acids might affect flavour of their meat.[著者抄録]成分の異なる4種の餌料 (マアジ肉、ハマチ用マッシュを混合したマアジ肉、ハマチ用ペレットそしてムラサキイガイ)で飼育したイシダイの筋肉エキス中の遊離アミノ酸を分離定量し、次の結果を得た。1. イシダイ筋肉エキス中のアミノ酸組成の特徴は、タウリン含量が著しく多く、つぎにリジン、アラニンそしてグリシンの含量が多い。2. イシダイの成長につれて、スレオニン、プロリン、リジン、ヒスチジン、セリン、グルタミン酸そしてアラニンの含量が変化する傾向がみられた。3. 魚肉たん白にでん粉を混合した餌料や貝肉を餌料として飼育したイシダイ筋肉エキス中には、スレオニン、セリン、グルタミン酸、グリシン、アラニンおよびプロリンなどが増加する傾向がみられた。これらのアミノ酸は、イシダイの食味に関係すると思われた。 | |||||||||||||||||||||
