The total chymotrypsin inhibitory activity decreased greatly during germination, slightly increasing again on the 6th day only. In the different parts of wheat, chymotrypsin inhibitory activity increased up to the 6th day in plumules, decreased in the seeds, and was detected at very low levels in the radicles. The results suggested that the role of chymotrypsin inhibitors was to control the proteases in the wheat. The molecular weight ranges of the chymotrypsin inhibitors did not change greatly, although those of wheat proteins tended to become smaller during germination.
