| 内容記述 | [Author abstract]Rice grains were divided four portions, from the bran layer to the starchy endosperm, and each portion was assayed for prolamin. The prolamin concentration decreased gradually from the surface to the center. The profile of distribution obtained by extraction with 70% ethanol was different from that obtained with 55% η-propanol. The patterns of SDS-PAGE did not show differences between the surface layer and the center portion of the grains. However, differences in the total prolamin contents and SDS-PAGE patterns were observed among five varieties of rice.[著者抄録]①米穀粒中のプロラミン画分の分布は,外層部に多く中心部にゆくにしたがって減少した.しかしその分布には抽出溶媒に,70%エタノールを用いるか,55% η-プロパノールを用いるかで差異があった.②米穀粒の層別のプロラミン画分のSDS-PAGEによる泳動像には,外層部と内層部間に差異が認められなかった.③用いた5品種の玄米のプロラミン含量は品種間で差異が認められ,特にコシヒカリは他の玄米に比較して,プロラミン含量は約1/2であった.④玄米のプロラミン画分のSDS-PAGEによる泳動像に品種間で差異が認められた. | |||||||||||||||||
