| 内容記述 | Colored rice has been used in medicinal cuisine since ancient times. Due to recent changes in the social environment, peoples awareness of health has been in creasing. Therefore, we examined the identification of antioxidants and the analysis of aromatic components in the bran of each type of readily available purple black rice, red rice, and green rice, as well as their correlations. As a result, it was possible to find 3,4-dihydroxybenzoic acid and p-methoxyphenol, which were present in 90-100% of the rice bran of purple black rice, exhibiting high antioxidant activity. This clarified that the presence of these compounds is involved in the expression of high antioxidant activity. | |||||||||||||||||
