| 内容記述 | 我々は無数の香気成分に囲まれて生活しており、様々なかおりを知覚しながら毎日を過ごしている。本研究の出発点となった疑問は、かおりとして知覚された後の香気成分の行方である。かおりとして知覚され、肺に到達した香気成分はその後どうなるのであろうか。この疑問を解決するために、本研究は食品香料として使用されているいくつかの香気成分をモデルにした体内動態解析を行った。その結果、複数の香気成分が体内に移行し、臓器蓄積することを見出した。さらに、いくつかの香気成分は体内移行することを介して、生命活動に影響を及ぼしうることを見出した。 | |||||||||

| 内容記述 | We live surrounded by countless scent components, and spend each day perceiving various scents. The starting question for this research was what happens to aroma components after they are perceived as a scent. What happens to the aroma components that are perceived as scent and reach the lungs? In order to resolve this question, this study conducted a pharmacokinetic analysis using models of several aroma components used as food flavorings. As a result, they discovered that multiple aroma components migrate into the body and accumulate in organs. Furthermore, we have found that some aroma components can affect life activities through their transfer into the body. | |||||||||
