The results showed varying aroma constituents in the pericarp depending on the cultivar, among which phenylethyl alcohol was common to all cultivars. The antioxidant capacity was also examined by means of determining the contents of polyphenols and flavonoids involved in antioxidant activities, which were shown to be highest in the cultivar Hon hakuto (2) grown in Okayama. The results were as expected by the authors in terms of the antioxidant capacity, including the polyphenol and flavonoid contents shown to be slightly lower than the α-tocopherol or ascorbic acid content, which are generally used to compare antioxidant activities.
